Pumpkin Muffins #1
1 2/3 cup flour
1 cup granulated white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon baking soda
1 teaspoon baking powder
2 large eggs
1 cup solid pack canned pumpkin
1/2 cup melted butter (1 stick)
1/2 cup chopped nuts, optional
Heat oven to 350 degrees F.
Lightly grease or paper line a muffin pan.
Mix flour, sugar, cinnamon, ginger, cloves, baking soda,
and baking powder together in a bowl and set aside.
In a separate bowl, mix eggs, pumpkin and butter, and
mix with a whisk until well blended.
Stir in nuts and pour over dry ingredients.
Fold in until just moistened.
Fill muffin pans.
Bake for 20 to 25 minutes or until tester comes out clean.
variation:
Add 1 cup chocolate chip morsels when adding the nuts.
