Pumpkin Walnut Biscuits

2 c. unbleached flour
1/4 c. sugar, plus some extra
1 tbsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/8 tsp. ground cloves
1/2 c. cold butter, (1 stick)
1/3 c. powdered or finely chopped black walnuts
1 c. canned cooked pumpkin
1/2 c. buttermilk, or a bit more if neededRecipe
Preheat oven to 450. Lightly oil a baking sheet.
Sift together the flour, the 1/4 c. sugar, baking powder, baking soda, salt, and spices into a large bowl.
Cut in the butter until the mixture resembles coarse crumbs.
Add the nuts.
In another bowl, stir together the pumpkin and the buttermilk.
Add the pumpkin mixture to the dry mixture and stire to combine.
The dough may be on the stiff side and possibly all the flour will not mix in.
Turn dough onto a lightly floured cloth and knead gently a few times to work in the rest of the flour.
Roll the dough out to a 1/2" thckness and cut with a 2" cookie cutter.
Transfer the biscuits to the oiled, shiny baking sheet.
Sprinkle the tops with additonal sugar and bake for 10 minutes.
Do not let them get too brown.
Serve immediately with butter.
Makes 12 biscuits.
