sweet - Carrot Bread
1/2 cup butter
1/2 cup heavy cream
1/2 cup honey
1 tablespoon cinnamon
3/4 cup water
1 cup vegetable oil
4 eggs
1 cup chopped walnuts
3-1/2 cups all-purpose flour
3 cups granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground nutmeg
2-1/2 cups grated raw carrots
Preheat oven to 350 degrees F. In a saucepan, combine butter, cream and
honey. Bring to a boil and cook one minute. Allow to cool. Mix
together dry ingredients. Add butter, cream and honey mixture to dry
ingredients. Add eggs, water and oil. Mix well. Fold in grated
carrots and walnuts and mix batter until well moistened. Spray two 9 X
5 X 3 bread loaf pans with cooking spray. Divide batter between two
pans. Bake at 350 degrees F for 65-75 minutes. Cool 15 minutes before
removing from pans. Allow loaves to sit overnight before slicing.
Yields 2 loaves.
