I had tried different recipes for pumpkin bread
over the years and really didn't care for them.
So then I came up with this one. It is the one we
like the best. It is moist and has a nice pumpkin
flavor. Enjoy.
sweet - Pumpkin Bread #1 * *, t+t
1 2/3 cups flour
1 level teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/3 cup butter flavored shortening
1 cup white granulated sugar
1 teaspoon white vinegar
1, 15 ounce can solid pack pumpkin
1/2 cup milk
Preheat oven to 350. Grease an 8x8x2 inch or regular
bread loaf pan. Mix the four, baking soda, salt, cinnamon,
ginger and ground cloves together. Set aside. Beat the
shortening and sugar together.(If you don't have the
butter flavored shortening, mix half butter and half
shortening together.) Then add the vinegar, pumpkin and
milk and mix together.
Add the dry ingredients and blend well. This should be
a heavy batter. Pour into the baking pan and bake for
35 - 40 minutes for the 8x8x2 pan, 55 - 60 minutes for
the bread loaf pan, or until a tester comes out clean.
Note:
I usually use a 28 ounce can of pumpkin, double the
rest of the ingredients and make 2 loaves. When cool,
I wrap one and freeze it and use the other one right
away.
