    sweet - Pumpkin Bread, easy

    2/3 cup oil
    2 large eggs
    1 cup solid pack canned pumpkin
    1 cup flour
    1 cup sugar
    1, 3 1/2 ounce package instant coconut pudding mix
    1/2 teaspoon salt
    1/2 teaspoon baking soda
    1/2 teaspoon cinnamon

    Heat oven to 325 degrees F.
    Grease a 9 x 5 x 3 inch loaf pan.
    Mix oil, eggs and pumpkin.
    Combine remaining ingredients and add to pumpkin mixture.
    Bake for 1 hour.
    Makes 10 - 12 servings.
