1 cup butter, softened
2 cup granulated sugar
4 eggs
1 cup mashed ripe banana
4 cups all-purpose flour, sifted
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 (20 ounce) can crushed pineapple, un-drained
1 cup flaked coconut
Pre-heat oven to 350 degrees F. Cream butter. Add sugar and cream
again. Beat in eggs, one at a time. Fold in pineapple with its juice
and coconut. Spoon in two greased and floured 9 x 5 x 3-inch loaf pans.
Bake at 350 degrees F for 60 to 70 minutes. Remove from pans. Cool on
cake racks.
Makes 2 loaves.
