    scratch - Blueberry Pudding Cake

    2 c. fresh or frozen blueberries
    2 tbsp. lemon juice
    1 c. flour
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 tsp. ground nutmeg
    3/4 c. + 1 c. sugar
    1/2 c. milk
    1 large egg
    1/4 c. melted butter
    1 tsp. vanilla
    1 tbsp. cornstarch
    1 c. boiling water

    Preheat oven to 350. Need an 8x8x2" baking pan.
    Place blueberries and lemon juice in the bottom of the baking dish.
    Mix together in a medium bowl, the flour, baking powder, salt, nutmeg, and the 3/4 c. sugar.
    Beat in the milk, egg, melted butter, and vanilla.
    Spread the batter over the blueberries.
    Mix the 1 c. sugar with the cornstarch and sprinkle over the batter.
    Pour the boiling water over all.
    Bake for 40 - 50 minutes.
