    scratch - Cranberry Pudding Cake

    3 c. cranberries, thawed if frozen
    1 c. flour
    1 tsp. baking powder
    1/4 tsp. salt, necessary for baking
    3/4 c. + 1 1/4 c. sugar
    1/2 c. half + half
    3 tbsp. melted unsalted butter
    1 tsp. vanilla extract
    1 tbsp. cornstarch
    1 tsp. orange zest
    1 c. boiling water

    Preheat oven to 350.
    Butter a 9" square or 10" round cake pan or baking dish.
    Place cranberries in the bottom of the cake pan.
    Stir together the flour, baking powder, salt and the 3/4 c.
    of the sugar in a mixing bowl.
    Add the half + half, butter and vanilla.
    Beat until smooth, preferably with an electric mixer.
    Spread the batter over top of the cranberries.
    Combine the 1 1/4 c. sugar, cornstarch and orange zest
    together and sprinkle over top of the batter.
    Gently pour the boiling water over everything.
    Bake for 45 minutes or until tester comes out clean.
    Makes 8 servings.
