scratch - Cream Cheese Chocolate Chip Fudge Cake
for the cake:
1 c. white sugar
1 c. light brown sugar
1 c. vegetable oil
2 large eggs, room temperature
3 c. flour
3/4 c. cocoa, measured, then sifted
2 tsp. baking soda
2 tsp. baking powder
smidgen salt
2 tsp. vanilla
1 c. warm brewed coffee
1 c. buttermilk
for the filling:
1/4 c. granulated white sugar
1 8oz. pkg. cream cheese, room temperature
1 tsp. vanilla
1 egg
1 c. miniature semi-sweet chocolate chips
**for the glazes**:
milk chocolate glaze:
3 1oz. squares melted milk chocolate, cooled
2 tbsp. unsalted butter
hot water to thin if necessary
optional white chocolate glaze:
2 1oz. squares melted white chocolate, cooled
1 tsp. melted unsalted butter
Preheat oven to 350. Generously grease a 10" bundt pan (any other tube pan will not work).
for the cake:
Combine sugar, oil, and eggs and blend well.
Add remaining cake ingredients and blend well, scraping bowl periodically. Set batter aside.
Whisk together sugar and cream cheese.
Then whisk in the vanilla and egg to make a creamy, smooth batter.
Place half of batter in the bundt pan.
Cover evenly with the cream cheese batter.
Sprinkle chocolate chips on top of cream cheese batter.
Gently cover with remaining chocolate batter.
Bake for 60 - 70 minutes, until cake tests done. (Cake should spring back when gently pressed.)
Cool 30 minutes in pan before removing to a cake rack.
(If cake sticks to pan, place it on a warm, moist towel for a few (5 - 10) minutes and then the cake will release more easily.)
Cake firms up more as it cools.
for the glaze:
Melt milk chocolate and stir well with confectioners sugar and vanilla. Add water as needed to make glaze pourable.
Melt white chocolate and stir butter into it to loosen up. Drizzle over top of the milk chocolate glaze, if desired.
**Before serving cake, invert it on a platter and drizzle with glaze or sprinkle with confectioners sugar evenly over top.
If using the white chocolate glaze, allow the chocolate glaze to set a few minutes, and then drizzle the white chocolate on top in a decorative pattern. if desired.
Glaze is optional. Dusting with confectioners sugar works just as well.
