    You can frost the tops or just leave these as is.

    List of Ingredients

    scratch - Vanilla Cream Filled Chocolate Cupcakes

    for the cupcakes:
    2 1/2 c. flour
    2 c. sugar
    1 tsp. baking powder
    1/3 c. cocoa powder
    1/4 tsp. salt
    2 eggs
    1 c. oil
    1 c. buttermilk
    1 tsp. vanilla
    1 c. hot water

    for the filling:
    2/3 c. butter flavored shortening
    1/2 c. sugar
    1/4 tsp. salt
    1/3 c. milk
    1 tbsp. water
    1 tsp. vanilla
    1/2 c. powdered confectioners sugar

    for the cupcakes:
    Preheat oven to 350. Line muffin tin with paper liners or lightly grease.
    Sift the flour, sugar, baking powder, cocoa and salt together in a large mixing bowl.
    Add the eggs, oil, buttermilk and vanilla. Mix for about 1 1/2 minutes.
    Add the baking powder to the hot water, this will probably fizz up. Then add to the batter and mix well.
    Pour the batter into the muffin tins, filling 2/3 full and bake for 20 minutes or until a tester comes out clean.

    for the filling:
    Combine the shortening with the sugar and cream together.
    Add the salt, milk and water and beat for at least 5 minutes.
    Then add the powdered sugar and beat until creamy.
    Make a circle cut in the top of each cupcake, removing the piece with a spoon; and setting it next to each cupcake. (You want to make sure you get each piece back in it's rightful cupcake later.)
    Insert the filling in the cavity.
    Place the appropriate cake top back on and push on just a little.
