    scratch - Crumb Cake

    updated April 14, 2004. I made this today and have made corrections that I found were different from what was originally written about this recipe.


    scratch - Crumb Cake #2

    for the cake:
    1/3 cup light oil
    2 beaten eggs
    2 teaspoons vanilla extract
    2 cups flour
    1 cup granulated white sugar
    3 level teaspoons baking powder
    1 teaspoon salt
    1 cup milk

    for the crumb topping:
    1 1/2 cups melted butter, (3 sticks)
    1 1/4 cups granulated white sugar
    3 cups flour
    1/4 teaspoon salt
    2 Tablespoons ground cinnamon

    Heat oven to 350 degrees F.
    Grease and flour an 11 x 15 x 2 inch cake pan.

    for the cake:
    Sift flour, sugar, baking powder, and salt together
    in a large bowl.
    Add oil, eggs, vanilla and milk. Blend well.
    Will not be much batter but will be thick.
    Spread evenly into pan. Bake only 20 minutes.

    for the crumb topping:
    Combine the butter, sugar, flour, salt and cinnamon
    together.
    The mixture will be crumbly.
    Sprinkle on top of cake while it is s still hot.
    Bake another 15 minutes.
    When the cake is completely cool, sprinkle with
    powdered confectioners sugar.
