scratch - Georgia Peach Pound Cake
for the cake:
3 c .flour
1/4 tsp. baking soda
1/2 tsp. salt
1 c. butter, softened
3 c. sugar
6 room temperature eggs
1 tsp. vanilla extract
1/2 tsp. almond extract
1/2 c. sour cream
2 c. chopped, peeled peaches
for the icing:
8 oz. softened cream cheese
1/4 c. softened butter
1 tbsp. milk
1/2 tsp. almond extract
1 1 lb. box sifted powdered confectioners sugar
for the cake:
Preheat oven to 350. Grease and flour a 10" tube pan.
Mix the flour,baking soda and salt in a small bowl. Set aside.
Cream the butter and sugar together until light and fluffy.
Add the eggs to the sugar mixture, 1 at a time, mixing well after each addition.
Stir the vanilla and almond extracts into sugar mixture.
Add the dry ingredients and mix well.
Fold in the sour cream and peaches.
Pour into the pan and bake for 75 to 85 minutes or until a tester comes out clean.
Cool in the pan for 10 minutes, then invert onto wire rack and cool completely.
for the icing:
Cream the cream cheese and butter in a mixer bowl until light and fluffy.
Add the milk and almond extract and mix well.
Add the confectioners sugar gradually, beating until smooth.
Frost cake.
Store leftover cake covered in refrigerator.
Makes 12 servings.
