scratch - Green Tomato Cake
3/4 c. butter or margarine
2 c. white granulated sugar
3 eggs
2 c. finely diced green tomatoes
1 c. chopped walnuts or pecans, optional
2 tsp. orange flavoring, or 1 tsp. orange extract
2 tsp. vanilla flavoring
2 1/2 c. flour
1/2 c. powdered unsweetened cocoa
2 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 c. milk
Preheat oven to 350. Grease and flour a 10 c. bundt or tube pan.
Combine the flour, cocoa, baking soda, salt and cinnamon together in a bowl. Set aside.
Cream the butter and sugar together in a large bowl.
Beat in the eggs, one at a time.
Stir in the green tomatoes, nuts and flavorings.
Add the dry ingredients alternately with the milk and mix well.
Pour into the bundt pan and bake 1 hour or until a tester comes out clean.
Let cool slightly in pan. Then remove to serving plate and frost or sprinkle with some powdered confectioners sugar, if desired.
Makes 12 servings.
