    List of Ingredients

    scratch - Italian Cream Cake + Frosting

    for the cake:
    1/2 c. butter
    1/2 c. shortening
    2 c. sugar
    5 eggs, separated + whites stiffly beaten
    2 c. plain flour
    1 tsp. baking soda
    1 c. buttermilk
    1 tsp. vanilla
    1 small can coconut
    1 c. chopped nuts, optional

    for the frosting:
    1 8oz. pkg. softened cream cheese
    1 tsp. vanilla
    1/4 c. butter
    1 lb. box powdered confectioners sugar

    for the cake:
    Preheat oven to 350. Grease and flour two 8" baking pans.
    Cream the butter, shortening, and sugar together.
    Add the egg yolks and beat.
    Stir the flour and baking soda together, then add alternating with buttermilk to the sugar mixture.
    Add the vanilla, coconut and chopped nuts and mix.
    Fold in the egg whites.
    Pour into pans and bake for 25 minutes.
    Let cool completely before frosting.

    for the frosting:
    Beat all the ingredients together until smooth.
    Frost the cooled cake.
