    scratch - Louisiana Fig Cake

    for the cake:
    2 c. flour
    1 tsp. cinnamon
    1 tsp. cloves
    1 tsp. nutmeg
    1 tsp. salt
    1 tsp. baking soda
    1 1/2 c. sugar
    1 c. oil
    3 eggs
    1 c. buttermilk
    1 tsp. vanilla
    1 c. fig preserves
    fig or lemon juice
    1 c. chopped nuts, optional

    for the glaze:
    1 c. sugar
    1/2 c. buttermilk
    1 tsp. vanilla
    1 tbsp. white Karo syrup

    Preheat oven to 350. Butter a tube or bundt cake pan.
    for the cake:
    Mix the flour, cinnamon, cloves, nutmeg, salt, baking soda and sugar together in large bowl.
    Mash the fig preserves with the juice, using just enough to mash well. Set aside.
    To the dry ingredients add the oil, eggs, buttermilk, vanilla, figs and juice and the nuts.
    Pour into the pan and bake for one hour, or until brown.

    for the glaze:
    Place all the ingredients in a saucepan and bring to a boil. Stir and boil for 3 minutes.
    Pour over the hot cake while it is still in the cake pan.
    Let the cake cool before removing from the pan.
