scratch - Mango Cake
1/2 cup butter or margarine
1 1/2 cup sugar
2 eggs
2 1/4 cup sifted flour
1/2 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup ripe, mashed mangoes
1/4 cup sour milk
1 teaspoon vanilla or almond extract
Preheat oven to 350. Grease and flour a 9x13 inch pan.
Cream the butter, sugar and eggs until light and creamy.
Sift the dry ingredients together. Combine the mangos,
vanilla extract and sour milk. Add the dry ingredients and
the mango mixture alternately to the butter mixture in 3
portions. Beat well after each addition. Pour into the pan
and bake for 30 minutes. After the cake has cooled, frost
with a powdered confectioners sugar frosting to which a
flavoring may be added.
