    scratch - Oatmeal Cake

    for the cake:
    1 1/3 c. boiling water
    1 c. quick cooking oats
    1/2 c. shortening
    1 c. light brown sugar
    1 c. white granulated sugar
    2 eggs
    1 1/2 c. flour
    1 tsp. baking soda
    1 tsp. salt
    1/2 tsp. cinnamon

    for the topping:
    1/2 c. light brown sugar
    6 tbsp. melted butter
    1/4 c. milk
    1 tsp. vanilla
    1 c. chopped or minced nuts, optional
    shredded coconut, optional
    **you can double the topping ingredients.

    Preheat oven to 350. Grease and flour a 9x13x2" pan.
    Sift flour, baking soda, salt and cinnamon together. Set aside.
    Mix boiling water and oats and let stand 20 minutes.
    Cream together shorting, sugars, and eggs, then add to oatmeal.
    Add flour mixture to oatmeal mixture.
    Pour into pan and bake for 40 to 45 minutes or until tester comes out clean.

    for the topping:
    Mix all ingredients together and spread on cake while warm. Bake another 10 to 15 minutes.
