cakemix - Peaches + Cream Cake
1 2 layer pkg. vanilla cake mix
2 16oz. cans sliced peaches, drained and chopped
3 c. heavy cream
3 tbsp. Amaretto
1/2 tsp. vanilla extract
3/4 c. sugar
Bake the packaged cake in two 8 or 9" cake pans according to directions. Let cool.
Beat the cream together with the Amaretto, sugar and vanilla until stiff. Then refrigerate to chill.
Slice cooled cakes across lengthwise thru the center of each of the two layers. (4 layers now)
Remove 3 c. of the whipped cream mixture and fold the chopped peaches in.
Spread 1/3 of the creamy peach mixture between each of the cake layers.
Spread the remaining whipped mixture on the top and sides of the layered cake.
Chill for at least 4 hours. Keep refrigerated until ready to use.
Makes 12 servings.
