    List of Ingredients

    cakemix - Pina Colada Pound Cake #2

    1, 18.25 ounce boxed yellow cake mix
    1, 3 ounce box instant coconut pudding mix
    1/2 cup water
    4 eggs
    1/4 cup oil
    1, 6 ounce can frozen pineapple juice, thawed
    1/3 cup rum
    1 1/2 cups sifted powdered confectioners sugar
    2 tablespoons toasted coconut

    Preheat oven to 350. Grease and lightly flour a 10 inch tube pan.
    Combine the cake and pudding mixes together in a large bowl and stir.
    Add the water, oil, eggs and 1/3 cup of the pineapple juice and blend
    well.
    If using an electric mixer, combine ingredients using the low speed.
    Then use the medium speed for 2 minutes.
    Pour into the tube pan and bake for 45 - 50 minutes or until a tester
    comes out clean.
    Let cool on wire rack for 10 minutes, then remove from the pan, and
    continue to let cool on the wire rack.
    Using a small saucepan, combine the confectioners sugar and the
    remaining juice concentrate.
    Bring to a boil. Then remove from the heat. Let cool slightly.
    Add the rum and stir to blend.
    Poke holes in top of the tube cake with sharp fork tines.
    Spoon the warm syrup slowly over the top, letting it drip down the sides
    of the cake. Continue to pour syrup over the top of the cake until it is all
    absorbed. Sprinkle with the toasted coconut.
    Then let the cake cool thoroughly before serving.
