    Recipe Introduction

    The making of this cake is rather quick. Preparation time 10 minutes, total cooking time 10 minutes.

    List of Ingredients

    scratch - Popcorn Cake

    14 cups unsalted popped popcorn
    1 cup milk or semisweet chocolate chips
    1 cup peanuts
    1/2 cup I Can't Believe It's Not Butter Light
    ...plus extra for greasing
    1/2 cup caramel or butterscotch chips or peanut butter
    5 cups miniature marshmallows

    Line a 10 inch tube pan or another 12 cup pan with aluminum foil.
    Grease the foil with some extra butter light.
    Use a super large bowl or a stockpot to combine the popcorn,
    chocolate chips and peanuts. Mix well.
    Melt the butter light in a medium saucepan over a low heat.
    Stir in the caramel chips and the marshmallows.
    Continue stirring until the chips and marshmallows melt and the mixture
    is smooth. Remove from the heat.
    Stir the marshmallow mixture into the popcorn mixture until everything
    is well coated; and press into the buttered foiled pan.
    Allow to cool completely before removing and cutting into slices for serving.
    Makes 14 servings or one 10 inch cake.
