    scratch - Pumpkin Cake Squares w/Cream Cheese Icing

    for the squares:
    2 c. flour
    1 1/2 c. sugar
    2 tsp baking powder
    2 tsp ground cinnamon
    1 tsp. ground ginger
    1/2 tsp. ground cloves
    1 tsp. baking soda
    1/4 tsp. salt
    4 beaten eggs
    1 16oz. can pumpkin
    1 c. vegetable oil

    for the icing:
    3 oz. cream cheese
    1/4 c. softened butter, (1/2 stick)
    1 tsp. vanilla
    2 1/2 c. sifted powdered confectioners sugar

    Preheat oven to 350. Lightly grease a 15x10x1" baking pan.

    for the squares:
    Combine the flour, sugar, baking powder, cinnamon, ginger, cloves,soda, and salt together. Set aside.
    Stir together the eggs, pumpkin, and cooking oil.
    Mix the dry ingredients with the wet ingredients until thoroughly combined.
    Spread batter into the baking pan and bake for 25 - 30 minutes, or until a tester comes out clean.
    Let cool on a wire rack, then frost and cut into bars.

    for the icing:
    Beat together the cream cheese, butter and vanilla until fluffy.
    Gradually add 1 c. of the sugar, beating well.
    Continue adding the powdered sugar until the desired consistency is reached.
