scratch - Red Velvet Cake #1
for the cake:
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 c. flour
1/2 tsp. salt
1 tbsp. cocoa
1 c. buttermilk
2 oz. red food coloring
1 tsp. baking soda
1 tsp. vinegar
for the frosting:
1/4 c. flour
1 c. milk
dash salt
1/2 c. shortening
1 stick butter
1 c. sugar
2 tsp. vanilla extract
Preheat oven to 350. Grease and flour two 8" round pans.
for the cake:
Cream shortening, sugar and eggs until light.
Sift flour, salt and cocoa together 3 times.
Add above alternately with buttermilk and food coloring. Beat well.
Then add baking soda and vinegar and mix.
Pour into pans and bake 40 minutes or until tester comes out clean.
for the frosting:
Cook flour, milk and salt together, then let cool.
Cream together shortening, butter, and sugar until fluffy. Beat well. Add cooled flour and milk mixture and vanilla and blend together.
Frost cooled cake.
