    scratch - Red Velvet Cake #2

    for the cake:
    1/2 cup vegetable salad oil
    2 eggs
    1 cup milk
    1 teaspoon vanilla flavoring
    1/2 small bottle red food coloring
    1 3/4 cup sifted cake flour
    1 1/2 cup sugar
    1/3 cup cocoa powder
    1 1/4 teaspoons baking soda
    1 teaspoon salt
    1/2 teaspoon baking powder

    for the frosting:
    3 tablespoons light cream
    1 teaspoon vanilla flavoring
    1/2 of an 8 ounce package cream cheese, cubed
    1/2 teaspoon salt
    3 cups powdered confectioners sugar

    Preheat oven 350. Grease and flour 2, 9 inch
    round cake pans.
    for the cake:
    Place oil, eggs, milk, vanilla and food coloring
    in a small bowl and whisk together.
    Sift together the flour, sugar, cocoa, baking soda,
    salt and baking powder together.
    Add the dry ingredients to the wet ingredients.
    Mix until smooth.
    Pour into pans and bake for 30 - 35 minutes or
    until a tester comes out clean.
    Let cool completely, then frost.
    for the frosting:
    Mix all ingredient together until well blended and
    creamy. Frost the cake.
