scratch - Red Velvet Cake #3

2 cups sugar
1 cup butter, softened
4 eggs
1 teaspoon vanilla
1 teaspoon red food color
1 cup unseasoned mashed potatoes,
...(instant prepared to package directions
...or fresh making sure there are no lumps)
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3-4 tablespoons cocoa
1 cup sour milk,
...(1 tablespoon lemon juice or white vinegar
...added to 1 cup of milk)

Preheat oven to 350. Grease and flour a 9x13 pan,
or 3, 8 inch round cake pans.
Cream together the sugar and butter.
Add the eggs, vanilla and food coloring. Beat well.
Beat in the potatoes.
Mix flour, baking soda, salt and cocoa together in
a small bowl.
Alternately, add the milk and the flour mixture to
the sugar mixture, beating well after each addition.
Continue until all flour and milk are used.
Spread batter evenly in pan(s).
Bake 45 minutes or until a tester comes out clean.
For serving, drizzle with chocolate syrup or frost with
a cream cheese frosting.
Makes 16 servings.
