    cakemix - Red Velvet Cake #4

    1, 2 layer boxed yellow cake mix, (no pudding type)
    1/2 cup sugar
    2 tablespoons cocoa powder
    1/2 cup oil
    4 eggs
    1 ounce red food coloring
    1 cup milk plus 1 tablespoon vinegar

    Preheat oven to 350. Grease and flour 2, 9 inch
    round baking pans.
    Mix all the ingredients together and pour into
    the pans.
    Bake for 30 minutes, or until a tester comes out
    clean. Let cool on a wire rack.
    Frost with either of the following 2 recipes.

    Fluffy Butter Frosting:
    6 tablespoons flour
    1 1/2 cup milk
    3/4 cup butter
    1/1/2 cup sugar
    1 teaspoon vanilla flavoring

    Mix flour and milk together and cook until thickened,
    stirring constantly with wire whisk.
    Allow to cool completely.
    Cream the butter, sugar and vanilla until fluffy.
    Add the milk mixture to the butter mixture and blend
    well. Spread on cake layers.

    Cream Cheese Frosting:
    1, 8 ounce package softened cream cheese
    1/2 cup softened butter
    1, 16 ounce package powdered confectioners sugar
    1 teaspoon vanilla flavoring
    1 cup chopped nuts, optional

    Cream together the cream cheese and butter.
    Add the sugar and vanilla and blend well.
    Stir in pecans. Spread on cake.
