scratch - Sweet Potato Pound Cake #1

1 cup butter, (2 sticks)
2 cups sugar
2 1/2 cups cooled, mashed/cooked sweet potatoes
4 large room temperature eggs
3 cups flour
2 level teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla
1/2 cup chopped nuts, optional

Preheat oven to 350 degrees F. Grease a tube pan.
Cream the butter and sugar together.
Add the sweet potatoes and beat until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Combine the dry ingredients and stir into the creamed mixture.
Add nuts and vanilla and stir.
Pour into the pan and bake for 1 hour and 15 minutes, or
until a tester comes out clean.
