    scratch - Sweet Potato Pound Cake #2

    cake:
    1 1/2 cups cooking oil
    2 cups sugar
    4 room temperature eggs
    2 1/4 cups self rising flour
    1 teaspoon ground cinnamon
    1 cup chopped nuts, optional
    1 cup shredded/flaked coconut
    3 cups grated fresh sweet potatoes
    1 teaspoon vanilla

    frosting:
    1, 8 ounce package softened cream cheese
    2 tablespoons hot water
    1/2 cup butter, (1 stick)
    1 pound powdered confectioners sugar
    1 teaspoon vanilla
    1/4 cup ground/chopped nuts, optional

    cake:
    Preheat oven to 325. Grease two 9" pans or a tube pan.
    Cream together the oil and sugar.
    Add the eggs one at a time, mixing thoroughly after each addition.
    Mix the flour, and cinnamon together.
    Add the flour mixture 1/3 at a time, mixing thoroughly after each addition.
    Add the nuts, coconut, potatoes and vanilla.
    Pour into pan(s) and bake.
    Tube pan for 1 hour, round cake pans for 40 minutes.

    frosting:
    Cream the cheese, water and butter together.
    Add the sugar, vanilla and nuts.
    Spread on the cake.
