    scratch - White Chocolate Pound Cake

    for the cake:
    1 c. evaporated milk
    4 chopped 1oz. squares WHITE baking chocolate
    1 c. softened butter, (NO SUBSTITUTE)
    1 2/3 c. white granulated sugar
    5 eggs
    2 3/4 c. flour
    1/2 tsp. baking soda
    1/2 tsp. salt

    for the frosting:
    3 chopped 1oz. squares WHITE (or can use the milk chocolate here) baking chocolate
    1/4 c. butter, (NO SUBSTITUTE)
    2 c. powdered confectioners sugar
    1/2 tsp. vanilla
    1 - 2 tbsp. milk

    for the cake:
    Preheat oven to 325. Grease and flour a 10" fluted tube pan.
    Combine evaporated milk and white chocolate in a heavy saucepan.
    Using a low heat, cook and stir until chocolate is melted. Let cool to room temperature.
    In a large bowl, cream butter and sugar together.
    Add the eggs to the butter mixture, one at a time, beating well after each addition.
    Stir together the flour, baking soda and salt.
    Add flour mixture to creamed mixture, alternately with white chocolate mixture. Beat just until combined. Pour into pan.
    Bake for 1 hour or until a tester comes out clean.
    Cool for 10 minutes in the pan. Remove from pan to a wire rack and let cool completely. Frost when completely cooled.

    for the frosting:
    Melt chocolate and butter in a heavy saucepan, over a low heat until blended and smooth, stirring often.
    Remove from the heat and let cool.
    Stir in the confectioners sugar, vanilla and enough milk to reach desired consistency. Drizzle over cake.
    Makes 12 servings.
