scratch - Yankee Doodle Cake

1 c. flour
1 tsp. baking powder
1/2 t. salt
1 tbsp. + 1 1/2 tsp. ground cinnamon
1/4 c. butter flavored shortening
1 c. + 3/4 c. sugar
1 egg
1/2 c. sweetened condensed milk or regular milk

Preheat oven to 350. Grease and flour an 8x8x2" pan.
Stir together the flour, baking powder, salt, and 1 tbsp. of the cinnamon. Set aside.
Beat together shortening, the 1 c. sugar and egg.
Add flour and milk, alternately to shortening mixture.
Pour into pan.
Mix together the 3/4 c. sugar and the 1 1/2 tsp. cinnamon.
Sprinkle on top of batter.
If not coated heavily, then sprinkle with additional sugar. This will make the top crusty.
Bake for 25 minutes or until tester comes out clean.
