    scratch - Zucchini Orange Cake w/Cream Cheese Icing

    for the cake:
    1 cup all purpose flour
    1 level teaspoon baking powder
    1/2 level teaspoon baking soda
    1/4 teaspoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    3/4 cup white granulated sugar
    1/2 cup vegetable oil
    2 eggs
    1/2 cup of an all bran cereal
    1 1/2 teaspoons grated orange peel
    1 tablespoon undiluted orange juice concentrate
    1 teaspoon vanilla
    1 cup grated zucchini
    1/2 cup chopped nuts, optional

    for the icing:
    1, 8 ounce package softened cream cheese
    1 tablespoon softened butter
    1/2 teaspoon grated orange peel
    1 teaspoon undiluted orange juice concentrate
    1 1/2 cups sifted powdered confectioners sugar
    milk, if needed

    for the cake:
    Preheat oven to 325 degrees F. Lightly grease a 1 1/2 - 2
    quart rectangular glass baking dish.
    Combine the flour, baking powder + soda, salt, cinnamon and
    nutmeg in a bowl and set aside.
    Use a large mixing bowl to beat the sugar, oil and eggs until
    well combined. Stir in the cereal, orange peel, concentrate,
    and vanilla. Add the flour mixture, zucchini and nuts and mix
    well. Spread evenly in the baking dish and bake for 35 minutes
    or until a tester comes out clean. Let cake cool completely. Then
    spread top with icing.

    for the icing:
    Beat cream cheese, butter, orange juice and peel until
    light and fluffy in a small bowl, and of good spreading
    consistency. If the icing is too thick, add 1 - 2 teaspoons
    of milk. Spread on cooled cake.
