cakeMix - Pumpkin Cream Cheese Cupcakes
for cheese filling:
4 ounces softened cream cheese
1 large egg
2 Tablespoons granulated sugar
for cupcakes:
1, 16 ounce package pound cake mix
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 teaspoon baking soda
1 cup solid packed canned pumpkin
1/3 cup milk
2 large eggs
Heat oven to 325 degrees F.
Grease or paper line 18 muffin cups.
for cheese filling:
Mix together cream cheese, egg and sugar in small mixer
bowl until smooth. Set aside.
for cupcakes:
Using a large mixing bowl, stir together the cake mix,
cinnamon, nutmeg, cloves and baking soda.
Add the pumpkin, milk and eggs, beating on medium mixter
speed for 3 minutes.
Fill muffin cups 3/4 full with batter.
Drope a 1 Tablespoon of the filling on top of the batter.
Bake for 25 to 30 minutes or until testerd comes out
clean.
Let cupcakes cool in the pans on for 10 minutes. Then
place on wire racks to cool completely.
Makes 18.
