cakeMix - Carrot Cake, w/canned carrots+Pineapply Frosting
1, 2 layer package carrot cake
small can of carrots, mashed
1, 15 ounce can crushed pineapple, drained
...and kept separated
1 container, ready made white frosting
Add the mashed carrots and the eggs listed on
the package to cake mix.
Do not add the oil listed, as you are using the
mashed carrots in its place.
Add the drained pineapple juice instead of water
listed on the package...Also, if it not enough,
add some water to make up the amount.
Add some of the drained pineapple to the cake
batter and mix.
Finish by baking to package directions.
Let cool then frost with a white icing mixed with
the remaining pineapple in it.
