    scratch - Apple Cake #3, (southern style)

    for the cake:
    1 1/2 cups butter flavored shortening
    1 1/2 cups granulated sugar
    1/2 cup golden brown sugar
    3 eggs
    3 cups flour
    1 teaspoon baking soda
    2 teaspoons ground cinnamon
    1/2 teaspoon salt
    1/2 teaspoon ground nutmeg, optional
    4 cups Granny Smith or similar tart apples,
    ...(peeled and finely chopped)
    2 teaspoons vanilla
    1 cup finely chopped walnuts, optional
    for the glaze topping:
    3 tablespoons room temperature butter
    3 tablespoons golden brown sugar
    3 tablespoons granulated white sugar
    3 tablespoons heavy cream
    1/4 teaspoon vanilla extract

    Preheat the oven to 325 degrees F.
    Grease a 10 inch tube pan with butter or butter flavored
    shortening. Then flour the pan, making sure to shake any
    excess out of the pan.

    for the cake:
    Use a large bowl to combine the shortening and sugars. Mix well.
    Add the eggs, one at a time, making sure to beat well after each.
    Sift together the flour, baking soda, cinnamon, salt and nutmeg,
    if using.
    Add the dry mixture to the wet mixture and blend together.
    Add the apples, vanilla and nuts, if using. Stir together with a
    large spoon.
    Pour into the tube pan and bake for 1 hour and 15 minutes, or
    until a tester comes out clean.
    Let cake set in the tube pan for 20 minutes.

    for the glaze topping:
    Combine the butter, sugars, cream and vanilla together in a small
    saucepan. Bring to a boil. Boil for 1 minute.
    Remove from the heat and set aside.
    Place the cake on a serving plate and drizzle the glaze over the top
    and down the sides of the cake.
    Makes 15 - 18 servings.
    May be served warm or cold.
