potato starch - also known as potato flour, is fine-
textured flour ground from potatoes that have been
cooked and dried. cake meal - is a fine matzo meal
specifically formulated for cake baking. It is available
in kosher stores and well-stocked grocery stores.
scratch - Banana Sponge Cake
7 eggs, yolks separated from whites
1 cup sugar
1 cup mashed bananas (about 2 ripe)
3/4 cup cake meal, (matzo meal - finally found this
...at my store yesterday for the 1st time next to
...the bread crumbs)
1/4 cup potato starch, (potato flour)
1/2 teaspoon salt
1/2 teaspoon vanilla
frozen whipped topping, thawed, or
...whipped cream
1 cup chopped walnuts, optional
sliced bananas, optional
Preheat oven to 325 degrees F.
Need an angel food cake pan.
Beat yolks with sugar until creamy.
Add bananas and beat well.
Whip egg whites until stiff.
Add cake meal, potato starch and salt to yolk mixture.
Fold whites into this mixture.
Gently fold in vanilla.
Pour into cake pan and bake for about 1 hour.
Cool upside down for 30 minutes, or until cooled.
Cut in 1/2, horizontally, with knife.
Frost with real whipped cream or frozen whipped topping
that has been thawed.
Top with banana slices and walnuts if desired.
Makes 8 servings.
