scratch - Chocolate Cream Cheese Cupcakes #1
1 1/2 cups flour
1 teaspoon baking soda
1 cup sugar
1/8 teaspoon salt
1/4 cup unsweetened cocoa
1 cup water
1/3 cup vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
for the cheese filling:
8 ounces cream cheese
1/3 cup sugar
1 egg
1/2 teaspoon salt
6 ounces chocolate chips
Combine first 5 ingredients, mixing well.
Stir in water, oil, vinegar, and vanilla.
Spoon batter into muffin pans that have been coated cooking spray.
Fill cups about 2/3s full.
for the filling:
Combine cream cheese and 1/3 cup sugar, creaming until light and fluffy.
Add egg and salt beating well; stir in chocolate chips.
Spoon 1 heaping teaspoon cream cheese mixture into center of each cupcake.
Bake at 350 for 30-35 minutes.
Cool in pan about 10 minutes. Remove to wire racks to completely cool.
Makes 2 dozen regular size muffins.
Note:
Can be made in minature tins.
If you make minature muffins you might
want to use minature morsels as well.
