    scratch - Fresh Peach Cake

    3 eggs, beaten
    1 3/4 cups white sugar
    1 cup vegetable oil
    2 cups all-purpose flour
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1 teaspoon baking soda
    2 cups fresh peaches - peeled, pitted and sliced
    1/2 cup chopped pecans

    Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9x13
    inch pan. In a large bowl, combine the eggs, sugar, oil, flour,
    salt, cinnamon, baking soda, peaches and pecans. Mix thoroughly by
    hand. Pour into prepared 9x13 inch pan and bake at 375 degrees F (190
    degrees C) for 50 minutes or until done. Makes 1 cake or 24
    servings.
