    scratch - Jam Cake #3

    1 cup butter, (1 stick)
    2 cups sugar
    4 egg yolks
    1 1/4 teaspoons baking soda
    1/2 cup buttermilk
    4 cups flour
    1 teaspoon ground cloves
    1 teaspoon ground allspice
    1 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    4 egg whites, beaten stiffly
    2 cups blackberry jam

    Preheat oven to 375 degrees F. Grease and flour cake
    pan(s), (3, 9 inch layer pans). Cream butter and sugar together. Add yolks,
    one at a time, and mix well. Mix the baking soda into
    the milk and stir; then add to first mixture.
    Sift the flour and spices together and add to butter
    mixture. Add the egg whites, and then the jam. Mix well.
    Bake for 35 minutes.
    Frost with your favorite icing.
