scratch - Jam Crumb Cake*
batter:
2 cups all purpose flour
3/4 cup white granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup lowfat buttermilk
2 tablespoons margarine, melted
2 1/2 teaspoons almond extract
1 large egg
1 large egg white
cooking spray
1, 9 ounce raspberry and/or cranberry preserves
crumbs:
2 Tablespoons all purpose flour
2 Tablespoons sugar
1 Tablespoon margarine, softened
Preheat oven to 325 degress F. Coat an 8 inch square
baking pan with cooking spray.
batter:
Combine first 4 ingredients in a bowl.
Combine buttermilk and next 4 ingredients in a small
bowl; stir well.
Add wet mixture to dry ingredients, stirring just until
moist.
Spread half of batter in bottom of baking pan.
Gently spread 1/2 of preserves over batter.
Top with the remaining batter, and then spread the
other 1/2 of preserves over batter.
crumbs:
Combine ingredients well with a fork. Sprinkle over
preserves.
Bake for 45 minutes, or until tester comes out clean.
Serve warm or at room temperature.
Makes 9 servings.
