This is not a long keeping cake
scratch - Orange Cake, quick
1/2 cup granulated white sugar (4 ounces caster)
3 ounces vegetable shortening or butter*
...light cooking fat, I use Spry)
5 ounces self rising flour
2 eggs
1 Tablespoon orange juice
grated rind 1 orange
Heat oven to 350 degrees F. (180 C).
Grease a 6 inch square/7 inch round cake pan.
Place all the ingredients into mixing bowl.
Stir gently until softened.
Then cream quickly for 2 minutes until soft and light.
Place mixture into cake pan of choice.
Flatten down on top.
Bake for 55 minutes, cake should shrink away from the
pan and a tester should come out clean.
Leave in the pan for 10 minutes.
Then turn out onto a wire cooling tray.
Makes 8 servings.
*(If using butter or margarine, the ordinary method of creaming will have to be used).
