A Plum Cake recipe used especially through holidays.
IMPORTANT:
Keep cake wrapped and stored in a cool area for AT
least 5 days BEFORE eating. Will not taste good if eaten
in less than the 5 days.
scratch - Plum Cake #3
2 cups self-rising flour
2 cups sugar
1 tsp cinnamon
1 tsp ground cloves
1 cup chopped pecans
1 cup Wesson oil
3 eggs
2 small jars of plum baby food (I prefer 2 large jars)
Juice of one lemon or RealLemon equaling the juice of one lemon
3/4 cup confectioners sugar
Mix all ingredients together well. Pour in greased, floured Bundt or tube
pan & bake at 350 degrees for 55 mins.
DO NOT OVERBAKE.
Mix juice of 1 lemon & 3/4 cup confectioners sugar & drizzle over cake.
