    scratch - Prune Cake #1, (w/Prune Frosting)

    for the cake:
    1 cup vegetable oil
    1 1/2 cup sugar
    3 eggs
    1 cup buttermilk
    1 teaspooon vanilla
    1/4 teaspoon ground allspice
    1/4 teaspoon ground nutmeg
    1/2 teaspoon ground cinnamon
    1 teaspoon baking soda
    1 teaspoon salt
    2 cups flour
    1 cup prunes, cooked mashed and pureed
    ...(try using the bottled baby food)
    1 cup chopped nuts, optional (preferably black walnuts)

    for the frosting:
    6 Tablespoons butter, softened
    3 cups powdered confectioners sugar, sifted
    3/4 teaspoon lemon juice
    4 - 4 1/2 Tablespoon prune juice
    1 teaspoon grated lemon rind
    dash salt
    1/2 cup prunes, pureed, (again, can use
    ...baby food prunes)
    2 Tablespoons chopped nuts, optional

    for the cake:
    Heat oven to 350 degrees F.
    Grease a pan. *See sizes below.
    Mix all ingredients together and blend well.
    Bake a *12x9x2 inch pan for 35-45 mins.
    Bake *2, 8 inch pans for 25-30 mins.
    Or until tester comes out clean. Remove from oven.
    Let cool completely. Frost with Prune Frosting.

    for the frosting:
    Cream butter in a large bowl.
    Add sugar alternately with juices and beat until well
    blended.
    Add grated rind and salt. Beat until frosting is of good
    spreading consistency. Fold in pureed prunes and nuts.
    The cake and frosting can be frozen.
