I have been using this recipe for years. Everyone always tells
me it almost melts in their mouth and is delicious. Do not know
where I had originally gotten it...could very well be one of the
recipes I incorporated a few together to get the taste I wanted.
Ah...try it for yourself.
scratch - Pumpkin Cake #1*, tube/2 regular bread pans
1 1/2 cups flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg, optional - (I do not use)
6 eggs
2 cups white granulated sugar
1 2/3 cups solid pack canned pumpkin,
...(not pumpkin filling)
1 teaspoon lemon juice
Heat oven to 350. Using butter flavored shortening, grease
and then flour 1 tube pan or 2 large bread loaf pans.
Stir together flour, cinnamon, baking powder, ginger, salt
and cloves. Set aside.
In medium bowl, beat eggs on high for 5 minutes or until lemon
colored. Gradually add sugar, being until dissolved. Stir in
pumpkin and lemon juice
Fold dry ingredients into pumpkin mixture. Bake for 45
minutes, or until tester comes out clean.
