    scratch - Sponge Cake #4, mile high

    10 large eggs, separated
    1 c. sugar
    1/4 c. water
    1 c. sifted flour
    2 tsp. vanilla

    Beat the egg yolks until thick and lemon colored.
    Gradually add 1/2 cup of the sugar. Then add the water and flour alternately. Stir until smooth. Whip the egg whites
    until stiff, but not dry and slowly add the remaining sugar to them. Whip the mixture until the sugar is dissolved, about 1 minute. Carefully combine the two mixtures and add the vanilla. Bake in an ungreased 10-inch tube pan in a slow 325 degrees oven for about 1 hour and 15 minutes. Invert the pan until the cake is cold.
    This fine grained sponge cake is very high, rising about
    1 1/2-inches above the top of the pan.
