scratch - Undercover Apple Pudding Cake

1 c. flour
1 c. white granulated sugar
1/2 c. packed brown sugar
1 tsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
2 tbsp. oil
1 tsp. vanilla
2 c. peeled cored, chopped apple
1 1/4 c. hot unsweetened apple juice

Preheat oven to 350.
Mix sugars together, then separate in half, set aside.
In an ungreased 9x13 pan, combine flour, 1/2 of the sugars,
cinnamon, baking powder and salt. Stir to mix.
Add milk, oil and vanilla. Mix well.
Stir in apples. Spread mixture evenly in pan.
Sprinkle with remaining sugars on top of batter.
Carefully pour hot apple juice over top.
Bake 40 - 45 min.
A cake layer will form on top.
Cool slightly before serving.
Top with ice cream or cool whip.
As it bakes, a rich sauce forms on the bottom.
Cool.........you can mix bake and serve in the same pan!!
