scratch - Washington Pie Cake #2
the cake:
1/4 cup shortening
2/3 cup white granulated sugar
1 egg
1 teaspoon vanilla flavoring
1 1/2 cups flour
1/4 teaspoon salt
2 Level teaspoons baking powder
1/2 cup milk
the cream filling:
2 tablespoons butter
3/4 cup white granulated sugar
1/8 teaspoon salt
1/3 cup flour
2 well beaten eggs
2 cups scaled milk
1/2 teaspoon vanilla flavoring
powdered confectioners sugar
whipped cream
the cake:
Cream shortening and sugar; add unbeaten egg. Add vanilla. Beat
thoroughly. Sift flour, measure, and sift with salt and baking
powder. Add alternately with milk to sugar mixture.
Pour into 2 well-oiled layer cake pans. Bake at 375 degree F. for
about 20 minutes. Put layers together with cream filling.
Sprinkle top with powdered sugar. Serve with whipped cream.
the cream filling:
Combine butter, sugar, salt, flour and eggs. Add milk
slowly, stirring constantly. Cook over hot water until thick and
smooth. Add vanilla.
Makes 10 servings.
