Bacon, Green Bean + Potato Casserole
1/4 pound bacon, diced
3 c. freshly sliced potatoes, (about 1 1/2 c.)
...parboil them till almost done
1, 14 1/2 ounce can cream of celery soup
1/3 c. milk
1 medium onion, diced
1, 14 1/2 ounce can green beans, drained
salt to taste
Brown bacon till medium dark in a large skillet or
Dutch oven. Remove half of drippings.
Mix celery soup with milk and set aside.
Add potatoes, soup mixture, onion, green beans and
salt.
Cover and simmer over low heat for 2 hrs. or bake in
oven at 350 for 1 hr. Or till potatoes are done.
Makes 8 servings
