Lamb + Beef Casserole

Lamb + Beef Casserole
2 pounds neck of lamb, fat removed and cubed
1 pound stewing beef, fat removed
1 cup beef stock
some hot water
butter for frying
3 sliced onions
2 pounds sliced potatoes
2 pounds cubed carrots, or parsnips, or turnips
...or a mixture of any or all
1 teaspoon dried thyme
ground black pepper to taste
salt
Preheat the oven to 325 degrees F.
Coat a casserole dish with cooking spray.
Melt a little butter in a heavy frying pan.
Use medium/high heat to brown lamb and beef cubes quickly,
turning frequently so as not to burn.
Add onions, and cook until onions start to clear, stirring frequently, about 5 minutes.
Pour into casserole.
Add all other ingredients except salt.
...Cheaper cuts of meat have a tendency to get tough unless
...you wait until end of cooking time to add salt.
Add enough hot water just to cover all ingredients.
Cover with a lid.
Cook in center of oven for 4 hours, until vegetables are
cooked through and ingredients are softer and mixed together.
Taste, adjust seasonings if necessary and serve.
Makes 6 servings.
