3/4 cup diced celery
1 small onion, minced
3 cups soft bread cubes, about 1/2-inch
1/3 cup butter
1/2 cup chicken broth, or make from bouillon cubes
3/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1/4 teaspoon baking powder
2 to 3 cups diced cooked chicken
1 can cream of chicken or celery soup, mixed with
....1/2 can of more chicken broth
1 cup fine or coarse bread crumbs, mixed with about
...1 tablespoon melted butter
Preheat oven to 350 degrees F. Butter a 7x11x1 or 2 inch
baking dish. Saute celery, onion and bread cubes together
in butter. Turn into a bowl. Mix the 1/2 cup broth and milk
together and mix with bread cube mixture, salt, pepper,
poultry seasoning and baking powder. Toss gently. Place
diced chicken in bottom of baking dish. Cover with the bread
cube mixture. Mix soup and 1/2 can broth together, then
spoon over top of bread cube mixture. Sprinkle with bread
crumbs and bake for 30 minutes. Serves 6.
