    Chop Suey Casserole

    1 to 1 1/2 pounds cubed pork
    2 Tablespoons oil
    1 chopped onion
    1 cup chopped celery
    1/2 cup uncooked regular white rice
    1, 10 3/4 ounce can cream of celery soup
    1, 10 3/4 ounce can cream of chicken soup
    1 soup can of water
    4 ounces sliced mushrooms, if canned use the juice
    2 Tablespoons soy sauce
    1/2 to 1 cup chow mein noodles

    Brown pork in oil. Mix together everything except the
    noodles, adding just a bit more water if using fresh
    mushrooms instead of canned mushrooms with the juice.
    Pour into a greased casserole dish.
    Cover and bake 350 degrees for 20 minutes. Uncover
    and continue baking for 20 minutes.
    Sprinkle chow mein noodles over the top and bake for
    20 more minutes. (Total baking time is 60 minutes/1 hour.)
    Makes 6 servings.
