This is a very good dish and does taste like a corn dog!
I put some mustard on my plate and dipped my bites in it!

Corn Dog Casserole
2 cups finely minced celery
2 Tbsps butter
1 1/2 cups sliced green onions
1 1/2 pounds of hot dogs
2 eggs
1 1/2 cups milk
2 tsps sage
1/4 tsp ground black pepper
1/4 tsp salt
2, 8.5 ounce packages corn muffin mix
8 ounces shredded sharp Cheddar cheese
Saute celery in butter for 5 minutes. Add onions and continue
cooking 2 minutes. Dump skillet ingredients into a large bowl.
Cut hot dogs in half lengthwise, then chop into bite size pieces.
Saute dogs in skillet; turning to brown. Add to bowl. Reserve
1 cup of hot dogs and veggies in a small bowl. Slightly beat eggs
and milk together. Add egg mix and next 4 ingredients to bowl.
Add 1 1/2 cups of cheese to bowl also. Mix all ingredients well.
Coat a 13x9x2 inch baking dish. Pour in mixture. Top with reserved
hot dogs and cheese. Bake uncovered, at 400 degrees F. for 30 minutes.
SCALED DOWN Version:
Corn Dog Casserole
1 c. finely minced celery
2 tablespoons butter
1/2 large chopped sweet onion, or
...1 to 1 1/2 cups sliced green onions
1 pound package hot dogs
1 egg
3/4 cup milk
1/4 teaspoon ground black pepper
1 teaspoon ground poultry seasoning, optional
salt to taste
1, 8.5 ounce package corn muffin mix
6 to 8 ounces shredded Sharp Cheddar cheese
Saute celery, and onion in butter for 5 minutes.
Meanwhile cut up hot dogs in small pieces; add to
skillet and saute until browned. Slightly beat eggs
and milk until blended. Add salt, pepper, muffin mix,
pepper and cheese. Add celery, onion and hot dogs to
corn muffin mixture. Pour in a 8x12x2 inch
greased baking dish. Bake uncovered at 375 degrees F.
for 30 to 45 minutes.
